What Baffle Grease Filters Do
A baffle grease filter is the first line of defence in any commercial kitchen exhaust system. Cooking generates grease-laden vapour — aerosol droplets of fat, oil, and moisture that are carried upward by the thermal plume from cooking equipment. Without an effective grease filter in the canopy hood, this aerosol enters the exhaust ductwork and accumulates as a flammable deposit.
Baffle filters work by directing the grease-laden airstream through a series of angled baffles. The direction changes cause the heavier grease droplets to impinge on the baffle surfaces, coalesce, and drain into a collection channel — while the cleaned air continues into the exhaust duct. Unlike mesh filters, baffle filters do not clog with grease — they drain continuously during cooking.
SANS 10400-T (South African National Standard for fire protection) and insurance underwriting requirements for commercial kitchens specify that grease extraction systems must be maintained in a clean and serviceable condition. A failed or missing grease filter is a fire code non-compliance and may void building insurance cover for fire damage originating in the kitchen.
